Greek Pasta Salad
List of Ingredients
8ounces rotini pasta
1/3cup olive oil
2tablespoons balsamic vinegar
1lemon, juiced
2large clove garlic, crushed
2teaspoons crushed dried oregano
1/2teaspoon salt
1/4teaspoon ground black pepper
1medium cucumber, peeled and cut into 1/4-inch rounds
1cup cherry tomatoes, halved
1/2cup pitted kalamata olives
1cup crumbled feta cheese

Directions
Cook pasta according to package directions; rinse with cold water and drain.
In a bowl combine oil, vinegar, lemon juice, garlic, oregano, salt and pepper; whisk well and set aside.
In a large bowl, combine pasta, cucumber, tomatoes and olives. Mix with dressing; toss well to coat. Gently fold in feta cheese. Refrigerate until served.
