    SICILIAN MEAT BALL SOUP

    List of Ingredients

    SICILIAN MEAT BALL SOUP

    egg
    1lb ground beef
    1/2cup soft white brad crumbs (1slices)
    2Tbsp finely chopped parsley
    2Tbsp grated Parmesan cheese
    1 small garlic clove, crushed
    1/2 Tsp salt Additional Parmesan cheese
    1/8Tsp pepper
    9cup beef broth or stock
    4oz thin egg noodles


    Recipe


    1. In a medium bowl, beat egg slightly. Add ground beef, breadcrumbs, parsley, 2Tbsp Parmesan cheese, garlic, salt and pepper, blend well. Using a teaspoon or melon baler, sharp meat mixture into approximately 40 small balls. In a 6-9 quart saucepan, bring broth or stock to a boil gradually add meat balls stir gently to separate, summer meatballs 5min using a slotted spoon, remove meatballs set aside, bring broth or stock to a boil, add noodles cook 5 to 7 min, stirring occasionally, return meatballs to broth or stock to a boil, add noodles Cook 5min longer or until needles are tender. Serve with additional Parmesan cheese to sprinkle on top. Makes 8 servi
