MOM'S POTATO SALAD
List of Ingredients
4 large baking potatoes, washed and UNPEELED
6 hard-boiled eggs1 cup mayonnaise
1/2 cup sweet pickle relish
Paprika (optional)
Recipe
In large pot, cover potatoes with water. Bring to boil on stove. Let simmer until skins begin to split, about 30 minutes to 1 hour. Remove potatoes from pot; place on plate and put in refrigerator overnight or until cold.
When potatoes are cold, remove skins with a paring knives (very easy as potatoes are soft), and cut potatoes into bite-size chunks. Peel eggs and chop. In large mixing bowl, toss together potatoes, eggs, and stir in mayonnaise and pickle relish; mix well. Place potato salad into serving bowl; sprinkle with paprika, for color, if desired.
