    BLT BOW TIE PASTA SALAD - part 2

    List of Ingredients


    • 2 1/2 c. uncooked bow tie pasta
    • 1 1/2 c. torn romaine lettuce
    • 1 1/2 c. cubed cooked chicken breast
    • 1 med. tomato, diced
    • 4 strips bacon, cooked and crumbled
    • 1/3 c. reduced-fat mayonnaise
    • 1/4 c. water
    • 1 tbsp. barbecue sauce
    • 1 1/2 tsp. white vinegar
    • 1/3 tsp. pepper


    Instructions


    1. Cook pasta according to package directions. Drain and rinse under cold water.
    2. In a large serving bowl, combine the pasta, rimaine, chicken, tomato and bacon.
    3. In a small bowl, whisk together the mayonnaise, water, barbecue sauce, vinegar and pepper. Pour over pasta mixture; toss to coat evenly. Serve immediately.
    4. Yield: 11 servings ( 1 cup each)
