    Freddie's Cabbage Rolls

    Source of Recipe

    Chef Rickey Saliba

    List of Ingredients

    1 lb. ground beef

    1 Cup uncooked rice

    1 Tbsp. salt

    2 tsp. cinnamon

    1 16-oz Can tomato paste

    1 Head jumbo cabbage

    1 Tbsp. pepper

    Recipe

In large bowl mix ground beef, rice and all but 3 Tbsp. of tomato paste, salt, pepper and cinnamon. Set aside. Clean cabbage head and wash thoroughly. Place in large pan of boiling water and cook just until tender and leaves peel off easily. Remove each leaf as it comes off the head and let cool. Get small handful of meat mixture and roll into cabbage leaf, fold ends over and place in deep baking dish.

Mix remaining tomato paste with 1-tsp. salt, 1/2 tsp. pepper, 1/4 tsp. cinnamon and water (amount of water may vary - use just enough to thin the paste so the mixture can be poured); mix thoroughly and pour over cabbage rolls in baking dish. Cover and bake in oven at 350 for approximately 2 hrs or tender.
