4 boneless, skinned chicken breasts
3 tbsp. butter
4 cloves garlic, pressed
2 cups raw long grain rice
1 14 1/2 oz. can corn, drained
1 14 1/2 oz. can tomato pieces,with juice
3 cups canned chicken broth
Recipe
Preheat oven to 375 degrees. For casserole, place chicken breasts in a baking dish. Bake for 10 minutes. Place butter in a small microwave proof dish and add pressed garlic. Microwave on high for 40 seconds or until butter is melted.
Rinse rice thoroughly and place in a large casserole. Add drained corn, tomatoes and their juice, the butter-garlic mixture and chicken broth. remove chicken from oven when still slightly pink. Cut into bite-size chunks and add to casserole dish. Place cover on casserole dish and bake for 45 minutes to an hour, or until rice is done. Serve immediately.
