    Great dip for super bowl parties!

    List of Ingredients

    2 15 oz. cans black-eyed peas with jalapeno peppers, rinsed and drained
    1 cup chopped red sweet pepper(1 large)
    1/2 cup chopped onion(1 medium)
    1/2 cup snipped fresh parsley
    1 or 2 cloves garlic, minced
    1/4 cup olive oil
    1/4 cup rice vinegar or white vinegar
    1/2 tsp. salt
    1/8 tsp. black pepper
    Large corn chips

    Recipe

    In a large bowl, combine black-eyed peas, sweet pepper, onion, parsley and garlic. Pour oil and vinegar over mixture. Sprinkle with salt and black pepper. Toss gently to coat. Cover and chill in refrigerator for at least 1 hour or up to 24 hours before serving. Serve with large corn chips.
