    Red Onion Poppy Seed Salad

    Recipe Introduction


    A good salad is always a welcome addition to any meal.


    List of Ingredients


    • 1 cup sugar
    • 2 tsp dry mustard
    • 2 tsp salt
    • 2/3 cup vinegar
    • 1 small red onion, divided. Use several slices for the salad and
    • chop the remaining onion
    • 2 cups oil
    • 3 tbsp poppy seeds
    • slivered almonds for salad topping
    • Romaine, Green Leaf Lettuce and/or Red Leaf Lettuce


    Instructions


    1. Combine the sugar, dry mustard, salt, vinegar, chopped onion and oil in a blender, blend for 1 minute.
    2. Add the poppy seeds and blend just a few seconds. (Makes 4 cups)
    3. Pour into a jar with a tight fitting lid. Store in the refrigerator. Make the dressing the day before, if possible.
    4. Toss salad greens, sliced red onions and slivered almonds. Add dressing just before serving and toss.
