    List of Ingredients


    • 1 cup chopped onion
    • 1/3 cup chopped celery
    • 3-4 garlic cloves
    • 4 tablespoons crisco pure canola oil
    • 4 cups chicken broth
    • 1 15 oz. can unsweetened pumpkin
    • 1 1/4 teaspoons ground ginger
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/2 cup apple juice


    Instructions


    1. saute first 3 ingredients in hot oil in a large sause pan over medium heat for 5-6 minutes
    2. stir in broth and next 5 ingredients and bring to a boil over medium-high
    3. reduce heat to low and simmer stirring occasionally for 20 minutes
    4. remove from heat and let cool slightly
    5. process mixture in blender until smooth
    6. return pumpkin mixture to saucepan stir in apple juice and cook over medium heat 3-4- minutes
    7. garnish with chopped chives and sour cream
    8. serve
