    **Marinated Mushrooms**

    This recipe is from 1985, an old restaurant I use to frequent back in Rhode Island, The Helm! These are good!


    List of Ingredients


    • 1 lb. small, fresh, whole mushrooms
    • 1 Tbsp. salt
    • 1 quart water
    • 1/3 cup salad oil
    • 1/4 cup white wine vinegar
    • 1 small onion, chopped
    • 1/2 tsp. peppercorns
    • 1 bay leaf
    • 1 tsp. salt
    • pinch of crushed red pepper


    Instructions


    1. Dissolve 1 Tbsp. salt in water; Add mushrooms, soaking for 10 minutes.
    2. Drain mushrooms and discard liquid.
    3. In saucepan, combine salad oil, vinegar, onion, peppercorns, bay leaf, 1 tsp. salt, and red pepper; Add mushrooms.
    4. Bring to boil, simmering for 5 minutes or until mushrooms are tender.
    5. Cool completely.
    6. Place in glass bowl or jar and place in refrigerate overnight to blend spices.
