    Portugues Garlic-Roasted Pork(Torresmos)

    List of Ingredients


    • 1/2 lb. fresh medium-hot red peppers, such as jalapenos, seeded and stemmed
    • 1 Tbsp. salt
    • 1/4 cup paprika, sweet or hot, depending on preference
    • 10 cloves garlic, chopped
    • 1/2 cup white wine
    • 1/4 cup red wine
    • 1 (4-lb) boneless pork butt or roast, cut into 8 pieces
    • 1/2 cup olive oil
    • salt, freshly ground black pepper


    Instructions


    1. Mince peppers and salt in bowl of food processor fitted with metal blade.

    2. Combine minced peppers with paprika, garlic, white wine and red wine in large bowl.

    3. Add pork pieces, turning to coat well.

    4. Cover with plastic wrap and refrigerate 24 hours.

    5. Remove from marinade.

    6. Pour oil in large roasting pan, add pork, season with salt and pepper and roast at 375 degrees for 1 hour.

    7. Turn pork often to keep moist.

    8. Reduce heat to 325 degrees and cook until pork is nicely browned, another 15-20 minutes.
