    **Tortilla Soup**

    Serve this with warm flour tortillas, corn bread, or tortilla chips. Have bowls of sliced green onions, chopped cilantro, grated jack cheese, sliced avacados for garnish!


    List of Ingredients


    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 1 Tbsp. olive oil
    • 2 Tbsp. chili powder
    • 1 tsp. oregano
    • 1 tsp. Italian Seasoning
    • 1 (28 oz. can) crushed tomatoes
    • 1 (10-3/4 oz. can) chicken broth
    • 1 (10-3/4 oz. can) water
    • 1 (15-1/4 oz. can), drained
    • 1 (15- 1/4 oz. can) white or yellow hominy, drained
    • 1 (4.25 oz. can) diced green chilies
    • 1/4 cup chopped, fresh cilantro/Italian parsley
    • 1 (14-1/2 oz. can) black beans, rinsed and drained
    • 2 boneless chicken breasts, cooked and chopped into bite-size pieces


    Instructions


    1. Saute onion and garlic in oil.
    2. Stir in chili powder, oregano, Italian seasoning, tomatoes, broth, and water.
    3. Bring to boil.
    4. Lower heat to simmer and add corn, hominy, black beans, chilies and chicken.
    5. Heat throughly and simmer 15 minutes.
    6. Season with salt and pepper to taste.


    Final Comments


    If this soup is not spicey enough for you, add additional chili powder or your favorite hot sauce.
