    Recipe Introduction


    This recipe hales from the Honorable Parris N. Glendening, Govenor of Maryland (? when). I'm from R.I./California. What do I know??


    List of Ingredients


    • 1 pound Maryland lump crab or can crab in a pinch
    • 1 cup seasoned bread crumbs
    • 1 large egg
    • 1/4 cup mayonnaise
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1/2 tsp. Old Bay Seasoning
    • 1 tsp. Worcestershire sauce
    • 1 tsp. dry mustard
    • margerine, butter, or oil for frying


    Instructions


    1. Remove all cartilage from crab meat
    2. In a bowl, mix bread crumbs, eggs, mayo, and seasonings.
    3. Add crab meat and mix gently, but thoroughly. If mixture is to dry, add alittle more mayo.
    4. Shape into 6 cakes.
    5. Cook cakes in a frying pan, in just enough fat to prevent sticking, until they are browned (about 5 minutes on each side).
