**Green Beans and Garlic**
Simple and a wonderful addition to greenbeans or asparagus!
Don't worry, the garlic really is quite mellow due to boiling.
List of Ingredients
- 3 Tbsp. olive oil
- 15-20 cloves of garlic
- 1/2 lb. of country ham (sliced about a 1/4 inch thick)
- 1-1/2 lbs. fresh green beans, ends snipped
- 1 Tbsp. butter
Instructions
- Bring a pot of water to a boil; Add garlic and cook cloves for about 8-10 minutes until soft.
- Remove them from the water and smash them with a fork to break up.
- Add greenbeans to same pot of water and cook for about 6-8 minutes until they turn a brillant green. **You may wish to steam greenbeans instead of boiling.
- While the beans are cooking, saute the ham in a tablespoon of butter until browned; remove from pan and set aside.
- To same pan, add 3 Tbsp. of olive oil and cook the mashed garlic cloves.
- Saute the garlic for about 1 minute.
- Add cooked ham to the garlic just to heat.
- Drain beans and place in serving bowl; pour ham and garlic mixture over beans and toss.
- Add salt and pepper to taste.
