    **Scalloped Corn Casserole**

    Moist and delicious side dish!


    List of Ingredients


    • 1 medium onion, chopped
    • 1/2 green bell pepper, chopped
    • 2 ribs celery, sliced
    • 2 Tbsp. butter or margerine
    • 2 Tbsp. vegetable oil
    • 1 (14.75 oz. can) cream style corn
    • 1 (11 oz. can) niblet corn, drained
    • 1 egg, slightly beaten
    • 1/2 cup shredded Cheddar cheese
    • 1/3 cup buttery round crackers, crushed


    Instructions


    1. Preheat oven to 325*.
    2. Grease an 8 or 9-inch casserole dish.
    3. In small frying pan, saute onion, green pepper, and celery in butter or margerine and vegetable oil. Saute until tender. Remove from oil.
    4. In medium size mixing bowl, combine cream style corn, niblet corn, egg and cheese.
    5. Mix onion/celery mixture into the corn mixture.
    6. Spread into casserole dish.
    7. Bake for 25 minutes.
    8. Remove from oven and sprinkle cracker crumbs on top.
    9. Return to oven and bake another 10 minutes.
