    Definitely cook this the entire 70 minutes.

    List of Ingredients




    4 cups flour
    1/4 cup sugar
    1 tsp. salt
    2 tsp. baking powder
    4 Tbs. cold butter, no substitutes
    2 cups golden raisins
    1 1/2 cup (scant) buttermilk
    1 egg
    1 tsp. baking soda
    1 yolk
    1 tbs. heavy cream

    Recipe



    Stir together flour, sugar, salt and powder. Cut in butter until mixture feels like coarse meal. Stir in raisins. Whisk together buttermilk, egg and baking soda. Pour into flour mixture all at once and stir with a fork until dough forms. Shape into an 8 inch dome on a teflon or lightly greased baking sheet. Cut an X 1/2 inch deep into bread. Whisk yolk and cream together. Brush onto loaf. Bake 70 minutes at 350 degrees, rotating half way through cooking time. You will probably also have to cover the bread with foil at this time to keep it from browning too quickly.
