    List of Ingredients


    • 6 Tbs. olive oil
    • 2 large tomatoes, diced and juice reserved
    • 3 cloves garlic, minced
    • 1 lb. fresh asparagus
    • 8 oz. fresh baby portabella mushrooms, quartered
    • 1 small can sliced black olives
    • 1 tsp. dried basil
    • 1 1/2 tsp. dried oregano
    • 1/2 lemon, juiced
    • 1 tsp. sugar
    • 1/8 tsp. Tabasco sauce
    • 1 1 lb. box of linguine or spaghetti


    Instructions


    1. Cook pasta according to package directions.
    2. Snap ends off of asparagus and blanch in boiling water for 4 min. Drain and run under cold water. Cut into 1 inch pieces and set aside.
    3. Meanwhile, heat olive oil in a heavy 3 qt. Saucepan. Add garlic and cook for approx. 30 sec.
    4. Add mushrooms and cook for about 5 min. Add tomatoes, juice, olives, basil, oregano and sugar and cook 5 min. more.
    5. Stir in asparagus and lemon juice. Cook for 2-3 min. Take off of heat and sprinkle Tabasco sauce over sauce and stir. Serve over pasta.
