    This is so good right after you've recovered from the flu or surgery. I don't know why but it always makes me feel better.

    List of Ingredients




    3 to 4 chicken breast halves with skin and bones
    6 cups water
    1 Tbs. salt
    1/2 medium onion, chopped
    several celery leaves
    1 large green pepper, chopped fine
    3/4 cup onion, thinly sliced
    3 Tbs. vegetable oil
    1/4 cup cornstarch
    1 (14oz) can diced tomatoes, drained
    Hot cooked rice

    Recipe



    Place chicken breasts, water, salt, onion and celery leaves in a large pot. Bring to a boil and skim off foam. Simmer about an hour until chicken is tender. Remove chicken to a plate to cool and strain broth.
    In a skillet, heat oil. Add green pepper and onion. Cook until tender, but not brown. Place broth back in large pot and add cornstarch, green pepper mixture, tomatoes and chicken that has been stripped off the bone. Bring to a boil and cook until broth is clear and slightly thickened. You may need to add some water to keep it from getting too thick. Serve over rice.
