    2 cups loosely packed ground ham (use a food processor)
    1 small onion, peeled and quartered
    8 oz cream cheese, softened
    1 Tblsp cider vinegar
    1 Tblsp water
    1 Tblsp sugar
    parsley for garnish
    party rye or pumpernickel, cut into triangles

    Recipe



    Grind the ham by cutting the meat into 2-inch chunks and pulsing it in a food processor until it resembles coarse crumbs. Remove form food processor and set aside.

    Without washing the food processor bowl, pulse the onion quarters until they are coarsely chopped. Return ham to food processor. Add cream cheese and pulse until smooth.

    In a small pan, bring vinegar, water and sugar to a boil, stirring to dissolve sugar. Boil for 15 seconds only. With the motor of the food processor running, pour vinegar mixture through the feed tube. Process until smooth, about 10 seconds.

    Turn ham spread into a bowl or crock and garnish with a sprig of parsley. Cover with plastic wrap and refrigerate for 4 hours or overnight. Serve with triangles of party rye or pumpernickel bread.

    Makes about 2 cups.
