Cranberry nut bread

List of Ingredients
- 2 cup sifted flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp soda
- 1 tsp salt
- 1/4 cup shortening
- 3/4 cup orange juice
- 1 T grated orange peel
- 1 beaten egg
- 1/2 cup chopped nuts
- 1 cup fresh chopped cranberries ( I use the blender to do this)
Instructions
- Sift together flour, sugar, baking powder, soda and salt
- Cut in shortening with pastry blender until mixture resembles coarse cornmeal
- combine OJ and grated orange rind with well beaten egg and pour all at once into the dry ingredients, mixing just enough to dampen.
- Carefully fold in chopped nuts and cranberries
- spoon into greased loaf pan, spreading corners and sides slightly higher than the center
- bake in moderate oven (350) for about 1 hour or until crust is golden brown and toothpick comes out clean
- remove from pan after letting set about 10 minutes. Cool. store overnight for easier slicing
