    Cranberry nut bread

    List of Ingredients


    • 2 cup sifted flour
    • 1 cup sugar
    • 1 1/2 tsp baking powder
    • 1/2 tsp soda
    • 1 tsp salt
    • 1/4 cup shortening
    • 3/4 cup orange juice
    • 1 T grated orange peel
    • 1 beaten egg
    • 1/2 cup chopped nuts
    • 1 cup fresh chopped cranberries ( I use the blender to do this)


    Instructions


    1. Sift together flour, sugar, baking powder, soda and salt

    2. Cut in shortening with pastry blender until mixture resembles coarse cornmeal

    3. combine OJ and grated orange rind with well beaten egg and pour all at once into the dry ingredients, mixing just enough to dampen.

    4. Carefully fold in chopped nuts and cranberries

    5. spoon into greased loaf pan, spreading corners and sides slightly higher than the center

    6. bake in moderate oven (350) for about 1 hour or until crust is golden brown and toothpick comes out clean

    7. remove from pan after letting set about 10 minutes. Cool. store overnight for easier slicing
