    Cucumbers with Sour Cream

    serves 4


    List of Ingredients


    • 1 cup sour cream
    • 1 scant tablespoon sugar
    • 1/4 cup chopped dill, fresh
    • 1/4 teaspoon white pepper
    • 1/2 teaspoon salt
    • 1 teaspoon celery seed
    • 2 long, slender cucumbers, sliced thin
    • 1 small onion, the same diameter as the cucumber, or whatever
    • More chopped fresh dill for garnish, if desired


    Instructions


    1. In a medium bowl, combine the sour cream, sugar, vinegar, dill, pepper, salt, and celery seed: blend
    2. Pare the cucumber and slice as thin as possible-an old-fashioned potato slicer is good for this, or use the slicing blade on your food processor
    3. Clean the onion, but slice it by hand, a bit thicker than the cucumber
    4. Add the vegetables to the sour cream mixture and toss lightly.
    5. Refrigerate for at least 2 hours so the cucumbers can absorb the dressing.
    6. Sprinkle with additional dill if desired and serve
