Hearty tomato tortellini soup

List of Ingredients
- 2 T. olive oil
- 1 cup chopped onion
- 1 cup diced green pepper
- 2 cloves minced garlic
- 1 tsp. dried basil leaves crushed
- 1 tsp. dried oregano leaves crushed
- 1/4 tsp fresh ground pepper
- 3 1/2 cups or one quart tomatoes, diced, chopped, cut
- 1 cup tomato sauce
- 1 cup water
- 1 cup sliced carrots
- 1 T. dried parsley
- 1 cup zuchini
- 1 cup mushrooms if desired
- 1 pkg frozen tortellini (19 oz or so)
- 1/2 cup grated parmesan cheese-grated add at end
- 2 cans chicken broth
Instructions
- Saute first 7 ingredients
- Add all others but cheese. Cook until done. Can put in crock pot also
- Add cheese and stir.
Final Comments
Great served with homemade bread.
