    Mexican Beef and Bean Soup

    List of Ingredients





    1/2 pound lean ground beef
    1 small onion -- diced
    2 cloves garlic -- minced
    1 - 14 1/2-ounce can chicken broth
    1 can Mexican-style chopped tomatoes (Ro-tel)
    1 15-ounce can pinto beans, drained
    1 teaspoon chili powder
    1 teaspoon ground cumin
    1/2 teaspoon oregano
    salt and pepper to taste
    1/4 teaspoon cayenne

    In large heavy skillet, brown and crumble ground beef. Stir in onion and garlic; cook and stir until onion is soft, about 3 minutes.

    Dump this and all the rest of the ingredients into a crockpot set on low. Cook about 6 hours.

    I like to serve this with Quesidillas made with Whole Wheat tortillas.
