    Zucchini Crustless Quiche

    -This makes a nine inch pie-
    4 cups THINLY sliced zucchini
    1/2 Cup chopped onions

    Saute in 1/2 stick butter
    Add to:
    3 well beaten eggs
    12 oz. Shredded mozzarella cheese
    2 TBS. fresh parsley, chopped
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. basil and oregano

    Optional-Any cooked meat like crabmeat in can.
    Bake at 350 for 30 mins. Let stand before slicing.
