    3/4 cup butter

    1 cup sugar

    3 eggs, separated

    1 teaspoon vanilla

    2-1/4 cups cake flour, sifted

    1 teaspoon baking soda

    1/4 teaspoon salt

    1 teaspoon cinnamon

    1 teaspoon cloves

    1 teaspoon allspice

    1/2 teaspoon nutmeg

    1/4 cup buttermilk

    1 cup blackberry jam

    1/8 teaspoon cream of tartar

    1/2 cup raisins

    1 cup pecans





    Blackberry Jam Cake - part 2

    1/3 stick margarine

    1 teaspoon flour

    1 cup sugar

    1/2 cup milk

    1 teaspoon vanilla




    Recipe



    Cream butter and sugar together.

    Add remainder of ingredients in order listed.

    Pour batter into greased and floured cake pan.

    Bake at 375 degrees for 30 minutes.


    Blackberry Cake Part 2

    Combine margarine, flour, sugar and milk is heavy saucepan. Bring to a boil and let boil for 3 to 3-1/2 minutes stirring constantly.

    Add one teaspoon vanilla and beat with mixer to right spreading consistency.

    Ice your cake!






    Final Comments

    If icing is too thick, add more milk, one teaspoon at a time.
