    Michigan Cook Book, Golden West Publ.,1999. Served by Virginia Boegner of The Ludington House 1878 Victorian Bed and Breakfast in Ludington, MI Ms. Boegner says "I also serve this cake at breakfast and the guests love it!"


    List of Ingredients










    2 qts. fresh red sour cherries, pitted
    2 1/2 cups sugar, divided
    1/8 tsp. almond extract
    2 cups flour
    4 tsp. baking powder
    1 cup milk
    2 Tbsp. vegetable oil
    Whipped Cream or Ice Cream

    Recipe



    Preheat oven to 375 degrees. In a large bowl, combine cherries with 1 1/2 cups of sugar and the almond extract. Set aside. In another bowl, combine flour, 1 cup sugar, baking powder, milk and oil; mix well and pour into a greased 9 x 13 baking pan. Spoon cherry mixture over batter. Bake for 40-45 minutes or until tests done. Serve warm with whipped cream or ice cream.
