    This cake was first printed in Southeren living in Febuary 1978. It is one of my favorites!


    List of Ingredients










    3 cups flour

    1 teaspoon baking soda

    1/2 teaspoon salt

    2 cups sugar

    1 teaspoon cinnamon

    3 eggs well beaten

    3/4 cup vegetable oil

    1 1/2teaspoon vanilla

    1 (8-ounce) can crushed pineapple with liquid

    1 cup coarsely chopped pecans

    1 3/4 cups mashed bananas ( about 2 large)










    Recipe



    Preheat oven to 350. Grease and flour 3 9-inch round layer pans; set aside.

    Mix flour, soda, salt, sugar, and cinnamon in larte bowl; add eggs and oil and stir only enought to moisten dry ingredients---do not beat. Stir in vanilla, pineaple, pecans, and bananas.

    Divide batter amoung pans and bake 23 to 28 minutes, until a toothpick inserted in center comes out clean.

    Cool cakes in pans 10 minutes; loosen around edges and turn out on racks. cool completely before frosting.
