    List of Ingredients


    • 2-1/4 cups sifted cake flour
    • 1/2 cup sugar
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 1/2 cup shortening
    • 1/2 cup milk
    • 1 cup maple syrup
    • 2 eggs
    • 1/2 cup chopped walnuts
    • 7 minute maple frosting:
    • 3/4 cup maple syrup
    • 1/4 cup sugar
    • 1 egg white
    • 1 tsp. light corn syrup
    • 1/8 tsp. salt


    Instructions


    1. Sift flour, sugar baking powder and salt into a mixing bowl.
    2. Add shortening, milk and about 1/4 cup maple syrup
    3. Beat Mixture for 2 minutes with electric mixer on medium speed.
    4. Scrape the bowl; then add the remaining maple syrup and the eggs. continue to beat the mixture for 2 minutes.
    5. Blend in the chopped nuts.
    6. Pour batter into greased pans lined with wax paper.
    7. Bake the cake in a moderate oven 350 degrees for 25-30 minutes for layers or 35-40 for oblong.
    8. Cool cake.then frost with maple frosting.
    9. Frosting:Place all ingredients in top of double boiler.
    10. Beat the mixtue for 1 minute with an electric mixer. Place the mixture over boiling water and cook it beating constantly until it is stiff enough to stand in peaks (about 7 minutes)
    11. Keep the water in the double boiler boiling actively throughout and scrape the mixture from the sides of the pan with a rubber spatula several times during cooking.
    12. Remove the frosting from the heat and continue to beat until it is cool and of spreading consistency.
