    Cake-Mayonnaise Cake

    Makes one 9-inch by 13-inch Cake

    Ingredients:
    1 cup Nuts
    1 cup Raisins
    1 cup Dates, chopped
    1 tsp. Baking Soda
    1 cup Boiling Water
    1 cup Granulated Sugar
    1 cup Mayonnaise
    2 cups All-purpose Flour, sifted
    Pinch of Salt
    1 tsp. Vanilla Extract
    2 Tbs. Baking Cocoa


    Recipe

    Pre-heat oven to 350-F degrees. Lightly grease a 9-inch by
    13-inch cake pan, set aside.

    Place the nuts, raisins, and chopped dates in bowl. Sprinkle
    the baking soda over fruit. Pour boiling water over fruit and
    soda. Let stand until plump.

    In mixing bowl, blend together the sugar and mayonnaise
    until the sugar is dissolved.

    Add the flour, salt, vanilla, and baking cocoa. Pour fruit
    mixture into the cake batter, and stir until blended.

    Pour the batter into the prepared cake pan and bake for 35 to
    45 minutes, or until a cake tester can be cleanly removed
    from the center. Let stand to cool. Serve warm or cold.
