    Cake-Sauerkraut Chocolate Cake

    Recipe Introduction I first made the recipe as a joke on a friend that had said they "HATED" sauerkraut. They actually growled with delight when they tried this cake. Of course they didn't know what was in it at the time.

    List of Ingredients








    2/3 C Butter or margarine
    1 1/2 C Sugar
    3 eggs
    1 tsp Vanilla
    1/2 C unsweetened cocoa
    2 1/4 C Sifted all-purpose flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 C water
    2/3 C sauerkraut, rinsed, drained and finely chopped (Use plain kraut - no caraway seeds)




    Recipe

    Cream well butter with sugar. Beat in eggs and vanilla. Sift together dry ingredients. Add alternately w/ water to egg mixture. Stir in kraut. Turn into two greased and floured (I flour with extra cocoa) 8 in. square or round baking pans. Bake at 350 for 30 min or until cake tests done. Fill and frost w/ chocolate or mocha frosting.

    As something different, I slice the two layers in half crosswise, using dental floss. Then I spread some fruit preserves between the two halves. I use the frosting between the two layers and frost the rest of the cake. I hope that makes sense.
