    Hot Fruit Holiday Casserole

    List of Ingredients

    1 16 oz can sliced pineapple
    " " " Peach Halves
    " " " Pear halves
    " " " Apricot Halves
    One 14 oz. jar of spiced apple rings
    2 TLB. all purpose flour
    1/2 cup light brown sugar, packed
    3/4 cup butter
    1 cup dry Sherry

    NOTE:MAKE THIS DISH A DAY BEFORE YOU SERVE IT
    Drain all the fruits and cut the pineapple slices in half. In an 18X28 inch baking dish, arrange the fruits in alternating layers, using the apple rings for the top. Combine the flour, sugar, butter and Sherry in the top of a double boiler over simmering water and cook, stirring until the mixture is thickened and smooth, about ten minutes. Pour the mixture over the fruit, cover with plastic wrap and let stand in the fridg overnight. When ready to bake, take casserole out of fridg and allow to set about half hour. Place in preheated 350 degree oven, and bake until bubbly hot and slightly glazed on top, about 25-30 minutes.
    This dish will serve about 12.
