    Sweet and Sour Chicken

    Sweet and Sour Chicken
    1/2 cup all-purpose flour
    1/2 teaspoon salt
    1 pound chicken breasts, cut into 3/4 inch cubes
    1 well-beaten egg
    1/2 cup sugar
    1/2 cup vinegar
    1/3 cup pineapple juice
    1/4 cup catsup
    1 teaspoon soy sauce
    2 Tablespoons cornstarch
    2 Tablespoons cold water
    1 cup pineapple chunks, drained
    1 medium green pepper, cut into 1/2 inch pieces
    1/2 onion, cut into 1/2 inch pieces
    Hot rice


    Recipe

    Combine flour and salt. Dip chicken into beaten egg and then flour mixture, coating each piece well. Fry in deep hot fat until browned and done, about 6 to 8 minutes. Drain on paper towel and keep warm.

    In a saucepan combine sugar, vinegar, pineapple juice, catsup and soy sauce; bring to a boil. Blend cornstarch and cold water together; gradually stir into pineapple juice mixture. Continue cooking, stirring continuously until mixture in thickened and bubbly. Stir in onion, green pepper, pineapple and chicken. Heat, stirring continuously till heated through about 5 minutes. Serve with rice. Makes 3 or 4 servings.

    *I usually at least double the sauce. You can also take out the vegetables you don't like and add more of the ones you do like. This recipe is very forgiving and can be adapted to best suit your taste.

    *Also, I stir fry the onion and green pepper in some soy sauce before adding to the sweet and sour sauce. It didn’t seem like they would be tender enough cooking for only 5 minutes
