    Waldorf Blueberry Cookies

    I first made these cookies for a parents meeting at Neeko and David's Waldorf School. Everyone loved them and they disappeared so fast that I had to make another batch when I got home for the teachers to eat the next day.




    List of Ingredients






















    3 C. flour

    1 T. baking powder

    3/4 tsp. sea salt

    1/2 C. butter

    1/4 C. Crisco

    1 1/2 C. sugar

    2 large eggs

    1/3 C. milk

    1 1/2 C. fresh blueberries

    3 T. pecans, chopped

    2 tsp. grated lemon rind









    Recipe



    Combine flour, baking powder and sea salt and set aside.

    Cream butter, shortening and sugar until light and fluffy. Add eggs and blend well. Add flour a bit at a time alternately with milk, beginning and ending with flour. Fold in remaining ingredients.


    Form into balls a bit bigger than an inch and place on a baking sheet. Bake at 375 degrees F. for about 10 minutes or until lightly browned. Cool on a wire rack.







    Final Comments

    These can also be made by using frozen dark sweet cherries in place of the blueberries and chopped slivered almonds in place of the pecans.
