    Welsh Cakes

    List of Ingredients


    4 C flour
    4 tsp baking powder
    1/2 tsp salt
    6 TBS butter, softened
    6 TBS lard
    1 1/2 C sugar
    2 C raisins or currants
    4 eggs
    8 TBS milk (1/2 C)


    Recipe

    Sift flour, baking powder and salt together. Cut in butter and lard to look like fine bread crumbs. Stir in sugar and fruit. Beat eggs lightly. Add to bowl with just enough milk to make a firm short crust pastry dough. Chill 1 to 2 hours. Roll dough to 1/4 inch thick on floured surface. Cut with 3 inch cutter. Bake on greased griddle or electric skillet over medium-low heat until golden brown, turning. Sprinkle with sugar. Cool. (Could add 1/2 tp nutmeg)
