    5 eggs
    1 c. sugar
    1-1/2 T. cornstarch
    5 c. milk, divided
    1 - 2 tsp. vanilla
    pinch of salt





    Recipe



    Beat eggs well with electric mixer. Combine beaten eggs with 4 cups of milk and all other ingredients in top of double-boiler.

    Cook on medium heat, stirring constantly, until mixture begins to thicken slightly.
    Remove from heat immediately and allow to cool. If you let it get a little too thick (easy to do!), you may add up to a cup of additional milk to thin it without sacrificing flavor.

    Serving Suggestions: Chill and then serve as a 'liquid' dessert. Or pour it over vanilla wafers and sliced bananas for the best banana pudding you ever tasted. Another option (the one my daddy loved!) is to substitute drained pineapple for the bananas, to make pineapple pudding. And at Christmas, it's a fabulous base for knock-your-socks off eggnog!!
