    Recipe Introduction

    Note: This recipe introduction is from the person who put this recipe on recipe circus. I added it because I thought it was interesting."This used to be made a restaurant that was a fixture in our area for many years when I was a child. It has since closed, but my aunt worked there in the 60s and the owner was kind enough to share her recipe when my aunt got married as a wedding gift to her. This particular recipe may be the same as some others....I am not sure, but when the restaurant was in business, they NEVER shared the recipe so I now feel privileged to know I have it. If you try it, you will see why it was such a special event to get to go have Chess Pie at the Chimney Corner...."

    List of Ingredients









    3 cups white sugar
    1 cup light brown sugar
    1 1/2 cups Half & Half
    1 1/3 sticks Butter
    1/4 tsp Salt
    1 1/2 tsp Vinegar
    2 tsp Vanilla
    8 eggs

    (makes 2 pies)




    Recipe

    Boil all ingredients but the eggs. Pour 1 cup of hot mix over the eggs. Stir but do not beat. Add remainder of hot mix slowly as to not cook eggs. Pour in unbaked pie shell that you have brushed with egg white. Bake at 350° until pie begins to brown. Turn oven down to 275° until pie sets (approx. 25-30 minutes).
