List of Ingredients
- 3/4 cup sugar
- 3 Tablespoons flour
- 1/4 tsp salt
- 3 eggs
- 3/4 cup milk
- 1-1/2 cups crushed pineapple , undrained
- 1-1/2 tsp grated lemon rind
- 1/4 cup butter
- 1-1/2 tsp gelatin, dissolved in 3 Tablespoons milk and 1-1/2 tsp lemon juice
- Topping
- 1/2 cup whipping cream
- 1 tablespoon sugar
- 2 tablespoons crushed pineapple, well drained
Instructions
- Mix sugar, flour and salt together.
- Separate eggs; add slightly beaten yolks to milk and blend with flour mixture.
- Add pineapple and lemon rind.
- Cook over hot water 25 minutes. Stirring constantly until thick and smooth.
- Remove from heat and blend in butter, gelatin and lemon juice.
- When cold fold in stiffly beaten egg whites. Pour into a 10 inch baked pastry shell.
- Chill until set.
- For topping- Whip cream; add sugar and decorate with well drained pineapple
