    Pecan Rice and Feta Salad

    1 7-oz pkg wild pecan long-grain rice

    4 oz feta cheese, crumbled (1 cup)

    1/2 cup chopped green sweet pepper

    1/2 cup chopped yellow sweet pepper

    1/2 cup chopped onion

    1/3 cup pine nuts or chopped pecans, toasted

    1 2-oz jar diced pimiento, drained

    1/4 cup olive oil or salad oil

    2 T tarragon white vinegar or 2 T white wine vinegar plus 1/8 to 1/4 tsp dried tarragon, crushed

    1/8 tsp pepper

    Lettuce leaves (optional)

    Instructions


    Cook rice according to package directions, using 1 tsp salt as directed; cool slightly.

    In a mixing bowl combine cheese, peppers, onion, nuts and pimento; add cooled rice.

    For dressing, stir together oil, vinegar, and pepper; add to rice mixture. Toss gently to coat.

    Cover; chill for up to 24 hours. If desired, serve over lettuce
