    Beef Barley Stew

    List of Ingredients



    1 ½ lbs. beef stew meat cut into ½” cubes
    1 tsp. thyme
    ½ tsp. marjoram
    1 medium onion, chopped
    ½ tsp. rosemary, crushed
    1 tbsp. oil
    ¼ tsp. pepper
    3 cans (14 ½ oz.) beef broth
    4 medium carrots, sliced
    1 cup pearl barley
    2 tbsps. parsley



    Recipe

    In large pot, brown meat and onion in oil. Add broth, barley, thyme, marjoram, rosemary and pepper; bring to a boil. Reduce heat, cover and simmer for 1 hour. Add carrots, continue cooking until meat and carrots are tender. Top with parsley.


    In this soup you could replace the egg noodles with barley. It will taste great.
