    Potato Soup

    List of Ingredients

    1 large onion chopped
    1 cup celery (chopped)
    1/4 cup finely chopped fresh parsley
    1/2 teaspoon salt
    1/4 teaspoon pepper
    4 cups chicken broth
    4 cups milk
    2 tablespoons cornstarch mixed with 1/4 cup water
    parsley
    4 cups diced potatoes

    Recipe

    In an 8 to 10 quart kettle on medium heat, melt 4 Tablespoons butter; add onion and celery and cook until onion is very
    soft, approx. 10 minutes. Add potatoes, salt and pepper, parsley, chicken broth. Bring to a boil; cover. reduce heat and
    simmer until the potatoes are tender. (30 minutes). Stir in milk and cook covered, until soup is heated well. Stir in
    cornstarch and water mixture. Continue cooking and stirring until the soup boils and thickens, about 5 minutes. Season
    with more salt and pepper and just before serving , float remaining butter on the top and sprinkle with parsley.
