10 Oz Frozen Chopped Spinach, thawed
1/2 Cup Onion, chopped
1/2 Cup Water
2 Whole Eggs, slightly beaten
1/2 Cup Grated Parmesan Cheese
1/2 Cup Shredded Cheddar Cheese
1/4 Cup Blue Cheese Salad Dressing
1/8 Teaspoon Garlic Powder
8 1/2 Ounces Corn Muffin MixRecipe
Combine first 3 ingredients in a small saucepan; bring to a boil and cook 10 minutes. Drain well and squeeze to remove excess liquid.
Combine spinach mixture and remaining ingredients; stir well. Cover and chill 2 hours.
Shape mixture into walnut-size balls and place 1.5 inches apart on a lightly greased baking sheet. Chill at least 30 minutes before baking.
Bake at 350 degrees for 10 minutes; serve warm.
