5 Lbs. Pork Butt, ground
1 Tablespoon Plus 2 Teaspoons Non-iodized Salt
2 1/2 Teaspoons Freshly Ground Black Pepper
3 Tablespoons Ground Sage
1 Tablespoon Sugar
½ Teaspoon Thyme
½ Teaspoon Ground Coriander
1 Dash Cayenne to Taste (optional)
1 Cup Water
Hog Casings
Recipe
Mix the dry ingredients together well, then stir in the water making a liquid seasoning.
Mix the liquid seasoning and blend into the meat. Use your hands to distribute the seasonings evenly.
Stuff the sausage mixture into the hog casings and twist into links, make individual patties, or leave in bulk form.
Divide the sausage into one-pound packages, pack into plastic freezer bags and freeze for later use.
NOTE: This recipe has received raves from old-time sausage makers. Fat and calories are reduced 50 percent compared to commercial sausage.
