    1 Lb. Ground Pork
    2 Teaspoons Rubbed Sage
    1 Teaspoon Salt
    ½ Teaspoon Pepper

    Combine all ingredients, mixing well. Shape into 6 patties about ½-inch thick. Cook patties in a large skillet over
    medium heat 5 to 7 minutes on each side. Drain.

    YIELD: 6 servings

    Garlic Sausage: Add 1 clove garlic, minced to Basic Sausage mixture; mix well.

    Italian Sausage: Add 2 Teaspoons Paprika and ½ Teaspoon Fennel seeds to Basic Sausage mixture; mix well.

    Country Sausage: Add ½ Teaspoon Ground Marjoram and 1/4 Teaspoon ground Thyme to Basic Sausage; mix well.

    Spiced Country Sausage: Add 1/4 Teaspoon Ground Cloves and ¼ teaspoon Ground Mace to Basic Sausage mixture; mix well.

    Sausage made at home using lean ground pork often contains less fat than many commercially prepared brands. The amount of fat can be reduced even more by buying a lean cut of pork and asking the butcher to trim all visible fat before grinding the meat.

    Use vegetable cooking spray in the skillet to help keep the sausage from sticking.
