    1 1/2 Lbs top-quality skirt steak, trimmed and membrane removed
    2 limes, halved
    Salt to taste
    Ground pepper to taste
    Flour tortillas
    Sauteed sliced onion strips
    Sauteed bell pepper strips
    Pico de gallo
    Guacamole (optional)

    About 30 minutes before serving time, light a charcoal fire and let it burn until the coals are very hot.

    While the coals are heating, cut the steak crosswise into 4 pieces and squeeze the lime halves over the meat. Sprinkle with salt and pepper. Grill over hot coals until medium-rate, about 3 to 4 minutes per side, depending on the thickness of the meat and heat of the coals.

    Let steak stand several minutes before cutting. Cut it across the grain into ¼-inch slices. Serve immediately with remaining ingredients.

    YIELD: 4 to 6 servings

    NOTE: You may marinate the steak for several hours in the lime juice with 1 tablespoon olive oil.
