    1 tablespoon dry active yeast
    1/2 teaspoon sugar
    1-1/4 cups warm water (about 100-110°)
    2 tablespoons extra virgin olive oil
    1 teaspoon salt
    3 cups flour
    1 head roasted garlic
    2 teaspoons chopped fresh basil
    1 teaspoon chopped fresh oregano
    Freshly cracked black pepper to taste

    Place the yeast, sugar, and water in the bowl of a mixer fitted with a paddle attachment, and mix well. Let stand for about 5 minutes, or until the mixture is foamy. Add the olive oil, salt, and about 2 cups of the flour, and mix to form a shaggy dough, adding more flour if needed. Place the rest of the flour on a board, transfer the dough to the board, and knead the flour into the dough until the dough is smooth and elastic. Oil a large boil with extra virgin olive oil, place the dough in the bowl, and rub it in the oil to coat well. Cover with a clean cloth and let stand in a warm place for about 1 hour, or until doubled in volume.

    Preheat the oven to 425°

    Punch the dough down and remove it from the bowl. Cut the dough in half. On a well-floured board, roll each piece of dough out into about a 10-inch circle, and place on a pizza pan. Remove the garlic from the head and spread it over the dough. Sprinkle with the fresh herbs and black pepper. Bake until golden brown, about 20 minutes. Cut into wedges and serve warm.
