    Adaptation of my Grandmother McCain's recipe

    List of Ingredients




    2 1/2 Cups Sugar
    1/3 Cup White Karo Syrup
    ½ Cup Boiling Water
    1 Teaspoon Vanilla
    2 Egg Whites (extra Large Eggs)
    1 Cup Chopped Pecans

    Recipe



    Cook sugar, Karo syrup and water together until it forms a firm ball when dropped in cold water (275 on a candy thermometer).

    Beat egg whites until stiff; slowly pour hot syrup mixture over beaten egg whites. Beat by hand with a wooden spoon until stiff or thick (dull in color); then add vanilla and pecan pieces. At this point, I divide the mixture in half, adding a few drops of red food coloring to one half and green food coloring to the other half.

    Quickly drop by teaspoonfuls onto wax paper.
