    Chicken Scampi

    Source of Recipe

    Vickey Kotwica

    Recipe Introduction

Vickey's Notes: This is a very quick and easy dish to make and it is very satisfying. I hope that you give it a try.

    List of Ingredients

2 Pounds Boneless Skinless Chicken Breasts, cut into strips
    1 Tablespoon Olive Oil
    Pepper, to taste
2 Tablespoons Grated Parmesan Cheese, low fat
    1 Tablespoon Dried Parsley
1/4 Teaspoon Garlic Powder, or more, if you like garlic
    Salt, to taste
1 Tablespoon Dried Oregano, or to your taste
    3 Tablespoons Lemon Juice
2 Tablespoons Worcestershire Sauce, or to your taste
1/4 Cup Dry White Wine, or chicken broth

    Recipe

Cut chicken breasts into strips; or else, use the chicken tenders.

Combine chicken with olive oil, pepper, Parmesan cheese, parsley, garlic powder, salt, oregano, lemon juice, Worcestershire sauce and white wine or broth in a bowl. Cover and refrigerate for several hours for the ingredients to blend well and season the chicken.

Remove chicken from the marinade (do not discard the marinade; set aside).

Place chicken strips in a single layer in a baking pan and broil about 6" to 8" from the heat; turn the strips and continue until the chicken is done. This takes about 10 to 15 minutes. Watch it closely as not to burn the strips.

Place reserved marinade in a saucepan and heat it. Add chicken strips and toss well to coat.

Place hot cooked angel hair pasta in a bowl and stir in the chicken/marinade; toss well until totally coated. Serve with a nice salad and some toasted Italian bread.
