2 Large Ripe Avocados
1 Tablespoon Cider Vinegar
1/4 Cup Sour Cream
1/2 Teaspoon Chili Powder
1/2 Teaspoon Ground Coriander
Salt to taste
Freshly Ground Black Pepper to taste
2 Tablespoons Minced Onion or Chives
1 Large Tomato, seeded, peeled and chopped fine
Parsley or Cilantro Sprig
Salad Greens


Recipe



Peel avocados; remove pits. Mash pulp with vinegar. Mixture need not be smooth.

Blend in sour cream and seasonings, mixing until well combined. Stir in onion and tomatoes.

Cover tightly and chill one hour. Garnish with parsley or cilantro sprig. Serve over crisp chilled salad greens.
