    Country-Style Turnip Greens

    List of Ingredients




    8 Oz. Sliced Bacon
    1 Lb. Turnip or Mustard Greens
    1 Medium Turnip, peeled and cut into bite-size pieces
    3 Cups Water
    1 Smoked or Plain Ham Hock
    1 1/2 Teaspoons Sugar
    1 Teaspoon Crushed Red Pepper
    1/4 Teaspoon Salt

    Recipe



    Cook bacon until crisp; drain, reserving drippings. Crumble the bacon and set aside.

    Discard stems of greens and any damaged portions. Tear up any large leaves.

    In a large kettle, bring water to boiling. Add the cooked bacon, reserved drippings, greens and turnips, ham hock, sugar, red pepper and salt. Simmer, covered, for one and one-half hours. Uncover; simmer 45 minutes more.

    Remove ham hock; when cool enough to handle, cut meat from hock and return to greens mixture.

    Serve greens with a slotted spoon.

    YIELD: 8 servings
