    Susan's Potato Soup

    This is simply the best potato soup I've ever had.


    List of Ingredients


    • 5-7 lbs. peeled and sliced potatoes
    • 1 lb. bacon, cut into 1 inch pieces
    • 3 large onions, peeled and sliced
    • 4 chicken boullion cubes
    • 1 qt. heavy cream
    • 1pint milk
    • salt and pepper to taste


    Instructions


    1. Boil potato slices for 12 minutes. Remove from heat and drain, reserving 2 cups cooking liquid.
    2. While potatoes are cooking, place onions and bacon in a large stock pot. Cook over medium heat until bacon and onions begin to brown.(this browning is what helps to give the soup it's lovely brown tint).
    3. Add cream, milk, boullion, cooking liquid, and potatoes to stock pot. Blend well, being sure to scrape the bottom of the pan well.
    4. Cook over low heat until potatoes are tender and broth is thickened. DO NOT BOIL. this should take about 30 minutes or so.
    5. Season with salt and pepper.
